INGREDIENTS FOR 4 PEOPLE

1 pork fillet (suitable size for a roast)
150 g Parmesan cheese flakes
100 g Parma raw ham
Garlic
Rosemary
Sage
Dry white wine
Extra virgin olive oil

PREPARATION

1. Cut the pork tenderloin by applying a horizontal book cut, first on one side and then on the other.
2. Thin the meat with a meat mallet to a thickness of about 1 cm.
3. Place a layer of Parma ham slices and one of Parmigiano Reggiano flakes.

4. Roll up the meat on itself and seal it with toothpicks.
5. Salt the surface, sprinkle it with sprigs of rosemary and sage and insert a few cloves of garlic at the end of the toothpicks used for sewing. Wet with plenty of extra virgin olive oil.
6. Bake in the oven at 180° C for 20 minutes, then drizzle with dry white wine and cook for another 25 minutes.
