Zucchini and Thyme Pie

Pie with egg and thyme

Ingredients:

3 courgettes

1 roll of puff pastry

2 eggs

to taste of salt

to taste of pepper

to taste of thyme

to taste of extra virgin olive oil

Preparation:

1. Wash the courgettes with cold water, remove the excess parts and cut them into very thin slices, approximately 1-2 mm. Heat a drizzle of extra virgin olive oil in a pan and cook the courgettes, with the lid on, until they are soft.

2. Salt them to release the water from the vegetables and continue until the end of cooking. Place the pastry with its baking paper on a baking tray. Pour all the courgettes onto the pastry.

3. Separately, beat 2 eggs with very little salt, pepper and thyme. Pour the eggs over the courgettes and place the pie in the pre-heated oven, at 180°C for 25 minutes.
