Forest honey excels for its well-characterized peculiarities. Naturally liquid and amber in colour, it has a perceptibly less sweet flavor than other honeys and is very versatile in gastronomic pairings.

It is not pasteurized, and therefore keeps all its nutritional and beneficial properties intact.

Honey is not suitable for feeding infants under 12 months of age.

Description

Color: very dark.
Tendency to crystallize: very low.
Flavour: medium, warm caramelized and vegetal (dried tomatoes, tomato preserves).
Aroma: similar to the smell, but in addition to the warm caramelized notes, which are always present, it can present some vegetal or fruity, processed fruits (dried plums) or woody aromatics.
Taste: slightly sweet (sweet similar to that of malt), weak or medium acid and bitter not perceivable.
Uses: it is a particular honey, which may appeal to those who say they don’t like honey, for example to sweeten and flavor milk and dairy products. For its aroma, particular consistency and the resistance to cooking also lends itself to replacing caramel in many different preparations that foresee it.
