Description
Citrus flower honey (Citrus spp.): The greatest production occurs in the southern and island citrus groves where this crop is practiced in large areas. Generally, mixed citrus honeys are obtained and only very rarely batches coming from a single variety (orange, lemon, clementine).
Colour: very light, white in the crystallized.
Tendency to crystallise: medium.
Flavour: medium, floral (similar to citrus flowers).
Aroma: medium, floral and/or fruity and/or aromatic.
Taste: normally sweet, slightly acidic and not perceivable bitter.
Uses: it is one of the most universally appreciated table honeys, as its floral aroma pleasantly surprises and goes well with almost all sweet foods. However, it is particularly sensitive to cooking and its peculiar characteristics will be better enhanced by cold uses. Try it to sweeten and flavor yogurt, whipped cream and desserts based on cream, mascarpone or ricotta.
