A honey with a strong personality obtained from the nectar of eucalyptus flowers. Intense aroma and caramel notes, excellent as table honey.

It is not pasteurized, and therefore keeps all its nutritional and beneficial properties intact.

Honey is not suitable for feeding infants under 12 months of age.

Description

Eucalyptus (Eucalyptus spp.) honey: it is produced in central-southern Italy, where eucalyptus have been planted as windbreak hedges or for reforestation.

Colour: medium to dark, tending towards gray in the crystallized version.

Tendency to crystallise: high.

Flavour: medium, animal protein type (dried mushrooms) and warm caramelised.

Aroma: medium, similar to the smell, but the caramelised component (toffee) prevails.

Taste: not very sweet (sweet similar to that of malt), not perceptible acid and bitter.

Uses: it is a particular honey, which when consumed as it is not very sweet and may therefore please those who say they do not like honey, for example spread on buttered canapés. The particular aroma, which recalls ingredients such as meat extract, dried mushrooms and stock cube, suggests trying it in the preparation of savory dishes, for example to enrich the vinaigrette of a mixed salad or in sauces based on butter.
