Description
Linden (Tilia spp.) honey: it is produced on wild linden trees at the foot of the Alps, often mixed with chestnut honey and on the trees of avenues and parks, if sufficiently large.
Color: light to medium.
Tendency to crystallize: low.
Flavour: strong, aromatic camphorated or resinous.
Aroma: similar to the smell.
Taste: normally sweet, not perceptible acidity and not perceptible to medium bitterness.
Uses: it is a particular honey, which when consumed is slightly bitter and with an aroma that is often defined as “pharmacy”. Like all unusual honeys, it can excite or disappoint, but it certainly does not leave you indifferent. Each combination should therefore be tried before being proposed, with the sole exception of its use to sweeten any herbal tea.
