The white truffle is the most prestigious among all varieties, and it grows from the autumn until the end of december. Intense and penetrating in the taste, thanks to the protective action of the butter the slices of white truffle can be available all during the year.

Description

Tiberio Roncuzzi is the founder of a small family-run artisan company that has been operating in the truffle sector since 1984. It deals with the sale of fresh truffles in Italy and in Europe and with the production of products based on preserved truffles. The passion for truffle hunting began in 1981, first as a personal search and then as a real activity.

The truffle in the Emilia Romagna region and in particular in the Apennine hills has existed for several centuries. The truffle is a mushroom that grows spontaneously through the roots of some trees (such as oak, linden, poplar, willow, hazelnut and pine) and which is searched for using trained dogs that can perceive its smell.
As for the fine white truffles (Tuber Magnatum), those from Emilia Romagna are considered among the best in Italy.

The truffles are processed fresh and packaged in hermetically sealed glass jars. The black summer truffle is available in carpaccio (thinly sliced) and cream (grated) versions, both in Extra Virgin Olive Oil. The white truffle being very expensive is offered in combination with butter, which absorbs its aromas in a sensational way; it is in fact a versatile and easy to use condiment that lends itself well to the most diverse uses in the kitchen: from simple bruschetta to the most complex creations of haute cuisine.

Preserved truffle-based products do not need refrigeration as they are contained in hermetic and sterilized glass jars. All products are processed in-house in an equipped and certified laboratory; no dyes or preservatives are used and, protected by olive oil or butter depending on the version, even once opened they have a comfortable time of use that reaches up to two weeks.

The quality of Roncuzzi products has been rewarded on several occasions: in fact, it won the Quality Award for a good 10 years (the most beautiful and most fragrant basket of fine white truffles) and the first prize Tartufo D’oro for 3 years (the heaviest single piece -600 gr- over the course of 13 years of holdings).
